Cast Iron Skillet Quiche

So I decided to do a little yummy food blog today because I love easy recipes that photograph well and are fun to make. So here goes.
This is for a cast iron skillet quiche. There is no crust involved so I don't know if it can technically be called a quiche but you get the point. 
Serves 6 (large portions)
1 Tbs. veg. Or olive oil
3 cups prepared brown rice
1 can cream corn (optional or regular corn)
3 cups diced veggies (whatever you like, I used green onions,Roma tomatoes and mushrooms)
12 eggs
1 cup half n half or milk
1 cup shredded cheese
Salt and pepper to taste

First you oil your cast iron
Then line the bottom with 2 cups brown rice




Then dice up veggies and whip eggs with cream




Then add corn on rice



Then add veggies on top




Then add remaining cup of rice and pour egg mixture over everything



Then add 3/4 cup cheese And salt and pepper





Put it in the oven at 450 for 15 minutes and then turn down to 350 for 25 minutes

Sprinkle remaining cheese /tomato and hot sauce if you want and done!


What's fun about this is that kids love it and you can add in all sorts of spinache/kale/broccoli and even meat if desired. Enjoy!
